Yogurt, in simple terms, is the bacterial fermentation of milk which is often sweetened or flavored. Lactobacillus & Streptococcus are the vital bacteria's for the yogurt's thick texture and consistency.   
Bulgarian Yogurt is a mildly sour tasting yogurt made from full fat fresh milk. The yogurt is made by using the strains of "Lactobacillus Bulgaricus"- a bacteria unique to Bulgaria.
